    Let's face it: Upscale steakhouses can tend to be one trick ponies. However, with a chef like Chris Curtiss at the helm, North Scottsdale's Bourbon Steak is elevated to something unique, while still being familiar. Grilled octopus, raw fish crudo dishes, gnocchi with mussels in a white wine sauce, and whiskey-centric classic cocktails are a great place to start at this luxe, dark, and stunning restaurant inside the Fairmont Princess Resort. You also won't be disappointed with sides like crispy roasted Brussels sprouts with pancetta and black truffle mac and cheese. While you could certainly splurge for a $75 Maine lobster pot pie, you'll feel equally pampered getting a butter poached steak. In particular, the mesquite-grilled filet mignon is as tender and moist as it could possibly be inside, with the smokey, uniquely Southwestern mesquite flavor on the outside. It's an excellent place to watch the game at or even to get into a Texas Hold'em game.

The food scores a home run, too, with pastas, steaks, prime rib, barbecue, and so on. The crème brûlée or the cheesecake for dessert are not to be missed.

    Since 1950, Durant's has sat proudly on Central Avenue, its iconic midcentury sign lit up for decades as the city has slowly grown around it. This vibe here is old-school, vaguely Rat Pack-ish: red-leather banquettes, scarlet wallpaper, dim lighting, a back entrance that takes you through the kitchen. (Gangster tales and Hollywood lore abound regarding original owner Jack Durant.) You'll still find Phoenix power players gathering at this chophouse today; Durant's continues to cook a mean 48-ounce porterhouse steak, in addition to slow-roasted prime rib, liver specials, lamb chops, and a sizable selection of seafood. (Another time-warp trademark at Durant's is the gratis relish tray: carrots, celery, green onions, and black olives served over ice.) The wine list is long, but for when-in-Rome reasons, go with a martini or an old fashioned. They pour 'em strong here. No takeout or delivery, and guests are asked to call the restaurant directly to make reservations.

    This popular eatery has been a local dining tradition since 1965, and we only wish we'd known about it as long. When we go for dinner, we can't help but start things off with the Tenderloin Toast, a tasty hors d'oeuvres of beef tenderloin, garlic crostini, and herbed cheese that we dream about when we're not at Feeney's dining on it. Typically we move on to the excellent Veal Picatta but, if we just can't get enough of the delicious, tender beef that comes from Feeney's kitchen, we order the London Broil-an end cut, because we love how crispy-brown and tender it is. Earlier in the day, we go for Louie's Big Fat Greek Salad, a tasty combo of calamata olives, tangy peppers, and tender lettuce leaves. Any time of day, we're happy to find ourselves at this fabulous Phoenix staple.

This spot is a scene: a tastefully dim, snazzy crowd, plush furnishings, and ceilings to the sky. Pasta is hand-crafted. Seafood towers rise. It's not healthful, but it is pure heaven.

    Scottsdale's uber-stylish Roka Akor, a spin-off of London-based Roka, sets itself apart from the Valley's myriad other Japanese restaurants by specializing in robatayaki, Japanese-style grilled dishes; a few are traditional, but many have a creative, contemporary spin. Of course, there's sushi here, too, as well as other top-notch tapas-style dishes. Honey-glazed grilled duck breast, butterfish tataki with white asparagus, and kamameshi — traditional rice hot pots — are among the highlights. And surprisingly (for a Japanese place), the desserts are scrumptious. Turns out, they were created by a French pastry chef.

Rokerij is Dutch for "smokehouse," but this is basically a classy chop shop with plenty of atmosphere. Dim lighting, copper-topped bars, European prints on the walls, and outstanding service make this the sort of place you'd take your boss or that wanna-be supermodel you've been chasing. The fare doesn't quite live up to the digs, which is slightly dispiriting. Still, it's better than Black Angus, so stop your whinin' and eat!

And what's even more impressive than Rustler's Roost's longevity is its long-time commitment to preparing and serving some of the best steaks, chops and ribs in town. Whether you're ordering a choice, center-cut Tenderfoot Filet (available in both eight-ounce Cowboy or ten-ounce Cattle Baron portions) or a Top Sirloin Rustler's Cut, you'll wind up with a plateful of the best-tasting beef this side of anywhere — and an earful of some purty darn good live country music, as well. (Fans of fish shouldn't miss the grilled salmon platter, topped with homemade honey-dill butter.) This is bar-none the most authentic cowboy grub around; for proof, look no further than the short list of Rustler's Sides: potatoes served baked, mashed, or fried. And while that's about it, you'll leave wanting more of these sides, because no one makes a potato (or a steak, or a pork chop) like Rustler's Roost.
